Hand rolled and Hand stitched Men Pocket Square / Pocket Chief. 

Each pocket square is individually cut, meticulously hand rolled and hand stitched.

♥ The whole process of making each Pocket Square is a Labor of Love from start to finish - about 1 hour, hand rolling then stitching between 160 - 170 tiny stitches and ensuring four 90º corners.

This time, I am having it as a Savoury Silky Soft Tofu Pudding with fried dried shrimps, fried shallots, a dash of soya sauce and Kecap Manis (Indonesian Sweet Sauce).

TAU FU FAH - 豆花 - Chinese Soya Milk Custard

QUICK Tau Fu Fah (Chinese Soya Milk Custard)


To all Tau Fu Fah lovers : )


Here is a quick recipe for silky smooth and soft Tau Fu Fah (Chinese Soya Milk Custard).






One bowl of home made warm Tau Fu Fa / Chinese Soya Milk Dessert



Ingredients

2 litres of ready made Unsweetened Soya Milk (from any Asian Grocer)

4g of GDL + 150 ml of cold water (mix)


Methods - ready in about 40 mins

Pour the soya milk into a heavy duty s/s pot.  Using medium flame, bring the soya milk to a slow simmer, for approx 6 to 8 mins until you see small bubbles appearing around the side.  Turn off the flame and then let the hot soya milk sit for 1 to 2 mins.  Remove the thin layer of soya milk skin with a chopstick. 

Mean while mix 4g of GDL with 150 ml of cold water.  Stir thoroughly until the GDL is fully dissolved.  Pour this mix into another clean pot (with a lid) and put this pot on the floor.

While standing, carefully pour the hot soya milk into the pot (with GDL mix).  Cover with the lid, leave it undisturbed and wait for about 30 mins for it to set.  No stirring is required!


Instead of making sugar syrup, I serve mine with some Maple Syrup.  


BTW I use a special 'Tau Fu Fah scoop' to scoop out my very Soft and Silky Tau Fu Fah.
Scoop out the water and the layer of bubbles before serving.




2 litres of Soya Milk + GDL (Gulcono Delta-lactone)



Still looks Great after leaving the Tau Fu Fah overnight / approx 12 hours,

NOTE:  Many thanks to my friend, Mrs Yap for sharing her recipe.  This is a slightly 'tweaked' version.  I used less GDL (because my first batch was sour and did not set) and I have decided to pour the hot soya milk from 1 metre/3 ft height into the pot filled with GDL mix (so that I do not need to stir).

BLACK SESAME PORRIDGE - 芝麻糊 - Chinese Black Sesame Sweet Porridge

Here is my take on a Quick and Simple Black Sesame Porridge.



Ingredients

Black Sesame Powder - approx 150g
Water - 1.5 litre
Potato Starch - 3 tbsp + mix with 1/4 cup of water
Rock Sugar - a lump about 1/2 egg size

1.  Mix black sesame powder with water.
2.  Add some rock sugar and cook in medium flame, stirring all the time.
3.  Bring to a boil, then add potato starch mix. Cook the black sesame
     porridge until your preferred consistency.  If it is too thick just add
     some more water.
4.  Enjoy!

KUMQUAT COMPOTE - recipe adapted from Stephanie Alexander's The Cook’s Companion




1 kg kumquat, washed and quarter, pips removed
sugar
water

Collect pips and place in a muslin bag.  Add quartered kumquat in a saucepan, cover with water.  Leave them overnight.
Next day, measure the cut kumquat and water (use the equal amount of sugar, ie 3 cups of Kumquat, add 3 cups of sugar).  In a non aluminium saucepan, bring kumquat, water and sugar to boil.  Reduce heat, simmer and keep on stirring the kumquat mixture for about 30 - 40 mins until it has thickened to a jam liked consistency.  
Leave the compote to cool and store in sterilised bottle.  
I eat my compote with toast, bircher muesli, greek yoghurt,  ice cream, roast pork and most recently I serve my Kumquat Compote with a Chocolate Cake.

My cake is baked in a Heart shaped Nordic Ware pan (grease pan with butter and then coat generously with cocoa powder.  Cool in the pan for 10 - 15 mins before unmoulding).
